Apple Cake

Dear Readers,

It is fall and the leaves are turning. I grew up surrounded by apple trees and this time of year I can not resist making every kind of dessert with apples that I can think of. So, I made an apple cake. It is an easy recipe and turned out to be beautiful too.


Apple Cake

adopted from Better Homes and Gardens

2 eggs
3 cups flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp apple pie spice
1/2 tsp. salt
1 tsp. cinnamon
1 cup granulated sugar
1 packed cup brown sugar
1 cup oil
1 Tbsp. vanilla
3+ cups peeled and chopped apples

Sift together all dry ingredients, set aside

Combine all sugars, vanilla, eggs, oil and beat for 2 min

Add dry ingredients and beat until just combined

Fold in apples

Pour batter into buttered bunt pan

Bake at 350 degrees Fahrenheit for 60 minutes

Cool and then turn onto platter and dust with sifted powdered sugar
