Raspberry Pie-Door County Style

Dear Readers,

It is that time of year again when we travel to the homeland of Door County. It IS the best place on earth! I had the opportunity to party, pick cherries and pick raspberries. So, with all of the fine fresh fruit, I wanted to create something beautiful and tasty. While everyone was outside enjoying the gorgeous weather, I made a pie!

Here is the recipe!


Crust:

1 stick butter-ice cold
1/8 cup ice cold water + 1-2 Tblsp. Ice cold water
1 cup flour

Cut butter into flour and when crumbled, add the water. Form into a ball and roll out the crust to fit a deep dish pie pan. (I used a lovely antique glass one)

Fill the pie with fresh raspberries, cleaned.
Add approximately 1 cup sugar.
Squeeze 1/2 lemon on top.

Streusel Topping:

1/2 stick butter-cold
1/2 cup flour
3/4 cup brown sugar (or more depending on taste)
Mix together into a fine crumb mix and spread over the pie.

Bake at 350 degrees F for 45 minutes.

Variations:

Serve warm with homemade vanilla ice cream.

Serve chilled with warm caramel.

Serve at room temperature with ice cold whipped cream.
