Cranberry Almond Squares

Dear Readers,

Spring is here in the north woods and since the weather is warmer, my taste buds have been wanting some tart cranberries. What better way to eat them than in a baked treat! This bar baked well, was easy to put together and did not have any butter!If you like cranberries, you will love this bar!

Recipe adapted from Old Fashioned Cookies

3 Cups Cranberries
1 Cup Homemade Applesauce
1 Tbls. sugar
1 1/2 cups flour
1 cup oats
1/3 cup packed brown sugar
1 tsp. cinnamon
1/8 tsp. salt
1/2 cup molasses
1/4 cup oil
1/4 cup ground almonds

Combine applesauce, sugar and cranberries. If using sweetened frozen cranberries, no need to cook.  Set aside. Combine flour, oats, cinnamon and salt. Add molasses and oil and toss with a fork until mixture is in crumbles. Press 2 cups into the bottom of a greased 9x11 pan. Top with cranberry mixture (evenly spread). Combine remaining flour mixture with the almonds and sprinkle over the cranberries. Press lightly.

Bake at 350 for 35 minutes

makes 24 squares
