I have been wanting to make these for a long time. I just looked at the New Years list of foods and picked the rolls out to make. They are super easy, healthy and you will NOT miss the meat!
I soaked 5 kinds of beans overnight: black, pinto, kidney, white, butter.
Then the next morning I rinsed them and put them in the crock pot on high for about 6 hours.
During that time, I chopped an onion and steamed it with chopped spinach, cooked rice and steamed the cabbage leaves.
When I was ready to eat, I assembled the leaves with a layer of rice, a layer of spinach and onions then topped with beans. For spices, I just sprinkled a mix of spicy southwest mix and it was delicious!!
