Dear Readers,
I have wanted to make this for so long. Dal is a wonderful dish made from lentils, spices and you can add other ingredients to make it original.
Here is my recipe.
3 cups lentils + 6 cups water in crock pot on high for 3+ hours
Add:
chopped onions (2 large)
one can crushed tomatoes
one can black beans-drained
pepper
salt
turmeric
garlic powder
I also made rice in a rice cooker for the Dal to be put over. It turned out beautifully. I did not over spice things and the taste made me want to eat more. The protein in the lentils can not be beat!

Herbed Baked Potato
Dear Readers,
I had a little leftover baked potato.....what to do with it? I made the herbed baked potatoes that were on my New Years list.
Chopped baked potatoes (1/4 inch cubes)
Drizzle with olive oil
Add spices to taste (see photo for what I used)
Bake at 410 degrees for 18 minutes
Enjoy!!
These turned out wonderful. Please try them you will love them. May be for the 4th of July with hamburgers or brats!

Stuffed Cabbage Rolls
Dear Readers,
I have been wanting to make these for a long time. I just looked at the New Years list of foods and picked the rolls out to make. They are super easy, healthy and you will NOT miss the meat!
I soaked 5 kinds of beans overnight: black, pinto, kidney, white, butter.
Then the next morning I rinsed them and put them in the crock pot on high for about 6 hours.
During that time, I chopped an onion and steamed it with chopped spinach, cooked rice and steamed the cabbage leaves.
When I was ready to eat, I assembled the leaves with a layer of rice, a layer of spinach and onions then topped with beans. For spices, I just sprinkled a mix of spicy southwest mix and it was delicious!!
